During our visit to Luye township in Taiwan last year, we had the privilege of meeting a seasoned tea master with nearly 5 decades of tea roasting experience—a true luminary in the world of tea. This artisan not only boasts a rich history of assisting in large-scale tea roasting events but also mentors apprentices across China, Thailand, Indonesia, and Vietnam. His passion, however, lies in the realm of scented teas, particularly the enchanting Jasmine teas.
Over the past 15 years, this tea master and his dedicated team delved into research to redefine how tea could absorb the captivating aromas of fruits and flowers. They experimented with various methods, from using fresh fruits in boxes to incorporating dried fruits directly into the tea. They even involved exploring the infusion of fruit pulps until an optimized method for absorption was perfected.
Today, this innovative process unfolds in meticulous cycles, using semi-completed tea leaves, known as 'mao cha,' as the foundational canvas for scenting. The journey begins with an initial low-heat bake, followed by the removal and loading of trays sandwiched between other trays with fruit pulps, peels, and extracts. Within a span of 3-5 days, the tea absorbs the essence of these fruits, creating the symphony of flavors. The process is then repeated 6-10 times, contingent upon the aroma achieved after each cycle, given the variability of pulps and extracts with changing annual seasons. As a result, the entire production process demands patience, taking up to 1-1.5 months to ensure quality.
When we were graciously invited to savor these exceptional teas, our taste buds were met with an interesting exposure of flavors. Whether enjoyed piping hot or refreshingly cold, the tea captivated our senses and ignited our enthusiasm. Immediately recognizing the innovative potential and amusement in every sip, we felt compelled to share this product with a wider audience. Collaboratively, we worked with him to create a few tropical fruit flavors that in our opinion would resonate more with the local audience.
